Purdue improved crop storage bag for kocho fermentation; Ethiopian traditional fermented food from Enset (Ensete ventricosum)

Enset (Ensete ventricosm) is a multipurpose crop serving millions of Ethiopians as an alternative food source. However, the traditional kocho preparation labor-intensive and results in poor quality. This study evaluated Purdue improved storage (PICS) bag to underground pit for fermentation. The experiment was arranged factorial design with two fermentation systems (underground PICS bag) three times (30, 45 & 60 days) 5 replications. Physico-chemical, proximate composition, microbial, sensory evaluations were conducted following standard procedures. have revealed that protein moisture contents increased time while crude fiber, carbohydrate, total energy decreased regardless systems. microbial result has demonstrated reduction extended but no significant difference between pit. shown bag-fermented better overall acceptability time. Generally, days finding bags could be used Further validation container various enset varieties seasons needed.
